Our eggs are different from most other eggs on the market. We have many different breeds that produce our eggs. This means they are different colors and sizes. You will find that the yolks of our eggs are darker than the yolks of the eggs in the grocery stores. The egg whites of our eggs are very thick. The shells of our eggs are strong compared to the ones in grocery stores.
This is because most of the eggs on the market come from chickens that are not able to forage on pasture and therefore are not eating the things that naturally grow in the environment. Most of the eggs on the market are washed, bleached (if they’re white), and taken through a big process to get them to the shelf. For this reason, as well as how the chickens are being raised and many other reasons, most of the eggs on the market have weak shells and light colored yolks.
Our chickens are not only for egg production but are breeders also. This means our roosters live with our hens. Because of this, all of our eggs are fertilized, but not to worry, that doesn’t mean that there is anything growing in the eggs, you aren’t eating chicks! The only way anything can grow inside the egg is if the egg is consistently incubated at 99.5 degrees for 1 day. This only happens when a hen decides that it wants have chicks and begins to sit on the egg. When hens lay their eggs, they sit on them for a short time and then leave the egg. If an egg is fertilized, it will have a white, almost clear, circle on the yolk that looks like a small eye ball.
Our eggs may have a blood spot in the yolk, this also is not bad and these eggs are safe to eat. Some people think a blood spot in an egg is an embryo, but this is not true. Blood spots are caused by a ruptured blood vessel in the hen’s ovary or oviduct. This can occur when a hen is stressed out or excited.
Egg List
All of our eggs are sold as one dozen. All of our large eggs will be sold at $4.00 a dozen until April 1, 2024. The price for large eggs will increase to $5.00 a dozen after that because the eggs will be large to extra large and very good quality. We are just starting this year so we have to sell what we have: small, large, some less quality, etc.
-Some colored eggs are not as large as some of the other eggs and will included in our cartons.
-Special Dozen: any full carton of non typical colored eggs, or full of up to three non typical colored eggs only. Non typical colored eggs include eggs that are dark brown, dark speckled brown, chocolate, blue, green, or pink eggs.
